Does anyone have any recipes to use with red cabbage??

1 med head red cabbage
2 tbsps olive oil
1 med onion, finely chopped
1lb breakfast-style sausage
1 clove garlic, minced
1 tbsp minced parsley
1/2 cup red wine
1/2 apple, peeled, cored and diced
1/2 cup cooked rice
salt
freshly ground pepper
2 eggs, lightly beaten
1/2 cup beef broth
2 tbsp melted butter
2 tbsps grated cheese
1 tsp nutmeg
1 tsp rosemary

Select and separate 8 of the large outer leaves of the cabbage (if hard to separate, boil the cabbage head briefly). Chop the rest of the cabbage to make about 2 cups. Place the whole leaves in boiling water until they are tender enough to fold for stuffing - do not overcook, or the leaves will lose their color. Drain. Heat the oil in a skillet and saute the onion until it is wilted. add the sausage meat and separate it with a fork as it browns. Pour off the excess fat, then add the garlic, parsley, chopped cabbage, wine and apple. Cook, uncovered, 15 minutes. Remove from the flame and stir in the cooked rice, salt and pepper. Mix in the eggs. Fill each cabbage leaf with several tbsps of the filling. Fold up 2 sides of the cabbage leaves, then roll to enclose the filling. Cover the bottom of a roasting pan with the broth and the melted butter. Arrange the stuffed leaves in the pan seam side down and sprinkle with the grated cheese,rosemary and nutmeg. Bake in a 350°F oven for about 30 minutes, adding more broth as necessary.
