Topic: Spicy Corn Bake

INGREDIENTS:
1/4 lb. Bacon, chopped into 1/2-inch pieces
1/3 C. Onion, diced
1/3 C. Celery, diced
1/3 C. Green Bell Pepper, diced
1 stick, Butter (1/4 lb.), plus 2 Tbsp. melted,
1/4 C. Milk
1 can (13.5 oz.) Cream Style Corn
1 can (13.5 oz.) Whole Kernel Corn
2 Tbsp. Jalapenos, chopped fine
2 Tbsp. Pimentos, chopped fine
1 tsp. Salt
1 Tbsp. Sugar
2 C. Corn Bread Muffins, Crumbled

DIRECTIONS:
In a large skillet over medium heat, cook bacon until crisp.
Add onion, celery and bell pepper and saute 2 minutes over
low heat; set aside. In medium-size pan, melt 1/4 pound
butter; add milk, corn, jalapenos, pimentos, salt and sugar;
heat over low heat. Add bacon-vegetable mixture and 1 C. corn
bread crumbs to corn mixture. Heat well, stirring frequently.
Transfer to an 8-inch-square-by-11/2-inch pan. Moisten
remaining corn bread crumbs with remaining margarine and
sprinkle on top of corn mixture. Bake at 350 degrees until
crumbs are light brown.

This sounds like a Paula Dean recipe...with the butter, bacon and the bacon grease...it sounds really good, though...

You must not watch the Food Network, True...she's this crazy lady from South Carolina that has wonderful recipes..but you have to cut the fat down from them...or rather I do...she started out doing bag lunches out of her home because she was scared to leave her house..she would send her sons out to sell the lunches...now she's a multi-million dollar corporation...

go to food network.com and look for Paula Deen...she has a lot of recipes on there and it might tell a little about her...she seems like she would be a really down to earth person...somebody you'd like to know....I'm going to make the cake she made on a show the other day...it's been her husband's favorite cake since he was little..a banana nut cake...it looked really good..I bake this stuff and then give it to my kids...

Kat, my daughter's best friend got to go to one of her weekend seminars for her birthday at Opry Land Hotel in Nashville...she said that was the best time she had ever had...

Paula Deen is actually from Georgia....she was born an raised in the Albany,Ga area and moved to Savannah after a divorce which is where she started the Bag Lady and pretty much became famous. What a wonderful cook I met her at a book signing in Ga a couple of years ago.

Katt, that's a really good pic...I was admiring your dress last night...what occasion were you all dressed up for? did you go to the Opryland Mall...I used to date a guy that lived way out on 40 and when I'd go see him I'd always stop at the Mall on my way home...I'd pass right by it, cause it was easier for me to go that way instead of taking I65 all the way down and hitting 40 that way....I really liked that Mall...Oh, I live about 115 miles north of Nashville Right off I65...that's why I'm so familiar with all of it..nashville used to be my stomping ground in the late 70'sbigsmile bigsmile drinker drinker drinker

Vicki....I was attending a formal banquet for work. I didn't make it to the mall....was too busy working...the hotel was beautiful though.....lol glad I wasn't footing the bill!

the whole place is beautiful...hotel and all...you should see it around Christmas...it looks like something from a fairy tale..The seminar was really expensive...I think for Friday and Sat. night it was $400.00 a person.....but for Heather it was her dream come true...Paula is her idol...

this is a great recipe by the way....alot of different variations...I've been making it forever....I put cheddar cheese on top and bake it in the oven.

it sounds really good..I've got to try it...Paula was on Oprah today and she was going to demonstrate baking a cake...apparently she was really nervous...her sons had just said they were nervous, cause they were on Oprah..she was mixing the cake up in the mixer and dropped a little glass container of vanilla in the bowl...batter was flying in the air..it was all over Paula's black dress...and she was about to roll in the floor laughing...she said she had taken an initial investment of $200.00 and turned it into
20 million dollars.....Oprah asked her how she did it...Paula said she worked like a damn dog...she's a trip.....
