used to bake all the time but I can't eat that kind of food any longer so it is pointless to bake

I used to make brownies, biscuits and pie crust from scratch from family receipes...good times :)

Those sound awesome :) I've made bagels a few times too and I did the water bagel approach at the end where you cook them in a water bath for like a minute...after that I placed them in seeds so they were well covered. Some always fall off of course but I usually just sprinkle them back on after I've put on some cream cheese or something :) Aren't NY style ones where you roll out the dough into a rope shape and then make it a circle? I prefer the roll into a ball, then poke a hole through approach myself...but yeah high protein flour is a must and not overproofing them...I usually put chocolate chips in them or cinnamon or cheese..I wanna try yours though haha

And hey ricanmami sounds like you made a cake with fruit? Those are yummy although I prefer chocolate ones haha...I made one like that last week with strawberries, blackberries, and raspberries with like whipped cream..looked pretty too :)

Yes, I used the 'poaching liquid'. I was annoyed cuz i did the float test first and it didnt float so I poached em anyway and they came out great. I did use the rope method, only cuz the recipe said that way is the one the pro's use.

I also went outta my way to get barley malt syrup. I live in podunk, so I had to get it by mail. Its used both in the dough and the poaching liquid.



Ahh yeah the float test...I'm guessing thats to measure how much the bagel has proofed? Longer proof = more air in it = floating? I did that but then retarded them overnight and it worked really well.
Haha yeah I think the pro's do use that one because that's how NY bagels look with like a wide side and a narrow side...personally I think a more uniform, pretty bagel with no seams looks better but oh well..tastes the same right?
Hmm yeah some stuff can be annoying to find...the malt helps with the color and poaching like you said...it also comes in a powder but it's probably still not found easily lol...
I've seen that you can substitute like baking soda in the poach or brown sugar in the dough but I'm sure they're not the same. I know using bread flour doesn't give them that bagel feel..
What else do you bake? Breads? Those are my favorite :)

Ahh I see...I don't think I've used high fiber flour...I'm glad it worked well for you though.
Making pasta is great :) I've only made like fettucini and raviolis but they were really good...definite difference from store-bought although the raviolis were kinda more time consuming than they're worth in my opinion...but still cool.
Mixers are the best too...makes things so much easier and the kitchen aids have like 1000 attachments. I have an ice cream making one and if you love dark chocolate I have a recipe for it that's great.
I love making pizza too...thin crust on a baking stone so it gets nice and crispy is my fave.
Sorry about the muffins though...are they easy to make at least? I've wondered about trying to make them...

I definately use a pizza stone. NY thin crust is the only kind for me. It must be foldable in texture as well as chewy. Im gonna try some barley malt next time I make pizza dough.


Nice! I like the chewy version as well. I've added flavorings/done different techniques and it doesn't seem to ever add much. Best was once you have your dough flattened out, you make an olive oil/herb mix and spread it on the dough before the toppings and it makes it not super crispy but nice I suppose...let me know how the malt goes though, I'm interested to see if it makes a difference in anything..


English muffins were remarkably easy to make. They came out great, but the flavor of the fiber flour was not at all masked so it wasnt fun for that reason. You cook em like little pancakes with batter on a cast iron skillet. I used bell jar lids to mold them on the skillet.


Interesting..I'll try to remember when I get to making them :)

Yeah..I think because the crust gets to be so thin or really thin that much of what you try to do is lost. My method is if you want a certain flavor, then throw a bunch on with whatever toppings you want :) I know that's what I do with garlic...and I haven't really made my own tomato sauce but I've had homemade versions and the difference is amazing compared to like the cheap store brands. I have made my own alfredo and used it and it's yummy :) haha I think I'm getting off topic though

The alfredo one I make is based off a few recipes I think but I actually add maple syrup to it to give it some sweetness...not a ton but idk I've made it before and it always seemed too plain to me..I like it at least :)
Ugh giada...looks nice but I think she gets by on that too much...like seriously you wear that when you cook? lol..I don't watch food network much anymore because I can't but I preferred like chopped or good eats I think its called? Like how some things are mass produced..I thought that was cool...although idk how I feel about like artisan breads being made that way. I prefer to do it more personally :)

Ah and it wasn't good eats I was thinking of, it was unwrapped
I'm also really into masterchef even though they don't bake much..
Yay breads :) artisan or not if you feel like making some or need some ideas I've made so many different kinds..mostly non-artisan but I have some experience with them...they can be harder to make at home though unless you have the right equipment etc..a mixer helps so much though
