Just made these for breakfast. They're too good not to share.
6 pieces of bacon - cooked until done but not crispy 6 eggs 1 cup of shredded cheese - whatever you like Fresh dill Preheat oven to 350 degrees. Cook the bacon until it is done but not crispy. Place on paper towels to cool. Spray the bottom and sides of cupcake pan. Line the sides of 6 cupcake cups with a piece of bacon each. (They don't have to be perfect. Helps if they stand up a little.) Crack one egg into each cup in the middle of the piece of bacon. Sprinkle with cheese and top with fresh dill. (Dried dill will do but isn't quite as good.) Place the cupcake pan in preheated oven and bake for 13-15 minutes. Loosen the sides with a knife, remove and enjoy. YUMMY!! |

Woops. Will the 3 year old Balderston cheddar do? And, I was thinking of subbing some maple syrup for the sugar. Have some in the fridge to use up.
