      After eating the watermelon, peel the hard green layer off.
 
  Cut into 1/2 pieces. Boil until rind is tender. Pour off all the water. Mush 'em up real good and pour off some excess water. Add a little pectin then, Cinnamon and sugar to taste. I think you will be surprised. Great on frozen yogurt, ice cream or on a peanut butter sandwich. You can also use the recipe and make watermelon preserves.  |
