I tried Fabio's Chocolate-Bacon Muffin recipe the other day. I thought it was too dense. However, the salty-sweet combo was yummy! Has anyone else tried it? What did you think of it?

I saw the ad for that milkshake. I'm tempted to try it, but I figure it would be the equivalent to eating a bucket of lard.

Bacon makes everything better! Yum!

Here is one of my favorite recipes, that incorporates bacon into sweet and savory.


CHOCOLATE BACON BANANA MUFFINS

1/2 cup of unsalted warm soft butter
1/2 cup dark brown sugar
2 eggs beaten
1/2 cup of clove honey
2 tbsp of dark molasses
2 mashed ripe bananas
2 tbsp of chocolate syrup
1 2/3 cups of all-purpose flour
1 tsp of baking powder
1 tsp of baking soda
3/4 tsp of sea salt
1 cup of raw oats
12 strips smoked bacon fried crispy
2/3 cup of dark chocolate chips plus 1/3 cup for the top of muffins


Preheat the oven to 350 degrees.

Grease the muffin tin, unless you use muffin liners.

In a mixing bowl cream the butter & sugar. Combine in the eggs, molasses, & honey. Combine in the banana. Combine in the chocolate syrup.

Combine the flour, baking powder, baking soda, and salt.

Mix that with the wet mixture. Combine in the oats. Combine in about 10 strips worth of the bacon crumbles. Save the other four pieces of bacon crumbles to top the muffins. Combine in the 2/3 cup of chocolate chips.

Spoon the batter into the muffin tin cups until they are almost full, about 3/4 of the way.

Top the muffins with bacon crumbles. Top with some chocolate chips.

Bake for about 18-20 minutes.
