Home made Vermicilli Bowl - (leftovers from last night for lunch today minus the chicken)
Cut up lettuce shreds; very thin uncooked long carrot slivers; thin sliced & carmalized in small amount of butter: a mix of yellow, orange and red peppers; adding a touch of olive oil to mix in to the strained cooked vermillici/rice noodles. To the bowel added, noodles, lettuce, carrots, peppers ... topping the bowl off with a Bruschetta spice mix of tomato, salt, garlic, origan, and chili peppers, which were added to the skillet that carmalized the peppers in, peppers removed from the pan, adding some water and mixing on very low heat to form a buttery spice liquid which I poured over the bowl of rice noodles and veggies. Variation: last night I boiled a chicken breast until slightly cooked then cut it up in long slices adding the chicken slices to the skillet remains of the cooked and carmalized peppers which were removed adding the spice mix and woking the chicken until fully cooked, removing the chicken adding water to make a liquid to pour over the rice bowl. My own creation and very good! |
