Bahamas Recipes
Authentic Johnny Cake



Delicious Johnny cake is served at almost all Bahamian meals.

Johnny Cake
2 cups of flour
2 tsp baking powder
1 teaspoon salt
1 Tblsp shortening
1 Tblsp sugar

Mix flour, baking powder, salt, shortening and sugar with enough water to knead.

Knead until smooth.

Roll out, on a lightly floured board, covered with a cloth and let lighten.

Then, bake at 350 degrees until brown on both sides (in a lightly greased frying pan) or for authenticity, on top the stove at very low heat. Serve warm with lots of butter.

Serves 6.


Used to love that with Pigfeet-or Chickensouse!
Also goes well with Boiled or Stewed Fish!

2 lb. beef chuck
1 tsp. salt
2 onions, white or yellow
2 Tbsp. lard or shortening
2 Tbsp. imported sweet paprika (most important to use real hungarian paprika for ultimate flavor)
2 bay leaves
1 Qt. water
4 peeled and diced potatoes
1/4 tsp. black pepper
Cut beef into 1 inch squares, add 1/2 tsp. salt. Chop onions and brown in shortening, add beef and paprika. Let beef simmer in its own juice along with salt and paprika for 1 hr. on low heat. Add water, diced potatoes and remaining salt. Cover and simmer until potatoes are done and meat is tender. Prepare egg dumpling batter:

1 egg
6 Tbsp. flour
1/8 tsp. salt
Add flour to unbeaten egg and salt. Mix well. Let stand for 1/2 hour for flour to mellow. Drop by teaspoonful into Goulash. Cover and simmer 5 minutes after dumplings rise to surface.

Serve hot with dollops of sour cream.

Guyanese Fruit Cake

Ingredients

1 bottle of rum (you may only use half, you could drink the rest or save it)
1 bottle of red wine (you may only use half, you could drink the rest or save it)
* 1/3 cup of maraschino cherries (cut in half)
* 1 lb raisins
* 1 lb prunes
* 1 lb currents
* 1 lb brown sugar
* 1 teaspoon baking powder
* 1 teaspoon cinnamon
* 1 teaspoon nutmeg
* 1 lb flour
* 12 eggs
* 1 lb butter

Preparation

* Grind dried fruits (raisins, prunes, and currents) and soak it in 1 part rum and 1 part red wine (make sure liquor is not drowning the fruits- pour sparingly). Store in an air tight container for three weeks.
* Cream the butter and sugar. Add the eggs (one/two at a time- keep mixing) and add soaked fruits.
* Add the flour with the baking powder, cinnamon and nutmeg.
* Fold in the cherries.
* Pour mixture in a baking pans and bake in a slow oven (about 325 degrees F.) for two hours.
* just when it is finished and you take it out of the oven, pour some red wine on the top of the cake and let it sit. (Best if eaten the next day)

Nice to eat especially at Christmastime!

Can be eaten at anytime of the year if you please for dessert.

Bacon Wrapped Peppers


One dozen Jalapeno peppers with stem removed and split lengthwise
Your favorite cheese
Two dozen shrimp
One dozen strips of bacon cut in half to make 24 pieces

Remove seeds and white pith from peppers with a spoon.
Place a piece of cheese to fill about 1/4 of the pepper
Place a raw, peeled and deviened shrimp into pepper
Wrap pepper in bacon and secure with toothpick

Place in smoker face up at about 250F for about an hour or until bacon is crisp to your liking ... or

Place on grill face up with indirect heat on low until bacon is crisp to your liking ... or

Place in oven face up on cookie sheet at 250F for about an hour or until bacon is crisp to your liking.

RUSSIAN CABBAGE BEET SOUP

2 1/2 lbs. cored red cabbage
Half a pound of beets cooked and peeled and sliced; retain the water from cooking beets for the brine
2 1/2 lbs. of Flanken are short ribs with meat.
1 1/2 lbs. of meaty soup bones
1 (16 oz.) can whole tomatoes
1 lg. red onion, chopped
2 carrots, grated
4 large white potatoes peeled and cut into chunks
1 (16 oz.) can of tomato puree
1 tbsp of red wine vinegar
3 tsp. of minced garlic
2 tsp. of sour salt
1 tbsp of sea salt for the brine
1 1/2 cups of pure cane sugar

Place the bite size chunks of cabbage, soup bones and Flanken in large stock pot. Combine in the whole tomatoes, sliced beets, onion, carrots and enough water to cover the cabbage. Cut the potatoes and allow them to soak in a brine of salted water and beet juice till ready to use.

Combine in the remaining ingredients and bring to boil then reduce heat to simmer and cook 3 hours until Flanken is tender. Combine in the brined potatoes for the last 20 minutes.

Remove soup bones from pot, cut Flanken into pieces before serving. Serve over the top of buttered noodles.

BREAKFAST CALZONES

Crust:
2 cups Bisquick
3/4 cup warm milk
light olive oil

Filling:
1/2 cup of drained ricotta cheese
8 oz. extra sharp cheddar cheese, shredded
4 oz. canned mushrooms
1/2 small red onion
1/4 lb ground cooked and drained sausage
1 cup of cooked and drain chopped bacon
1 chopped red bell pepper

Scramble five eggs with 2 tbsp of warm milk and divide into four portions.

Crust:
Preheat oven to 400°F.

Mix Bisquick and milk until stiff. Roll into large ball, divide into four smaller balls. Roll each ball into 6 inch circles. Brush filling side with olive oil, and then add filling in layers as follows.

Filling:
Layer Shredded cheddar, scrambled eggs, ricotta, sausage, bacon, red pepper, onion and mushrooms on one half of each circle.

Moisten edges of dough, and then fold each circle over, turnover style, forming 4 "Calzones"; using tines of fork, press edges to seal. Perforate tops with fork.

Grease sheet with butter and place turnovers on sheet; bake until golden 15 to 17 minutes.
