I make small cupcakes raspberry cheesecake also with a dark chocolate hard shell topping.

No they are terrible so bad I eat them all so no one I mean no one has to go though that.

I kinda wondered about the hard shelled topping on cupcakes, would be better with some sorta frosting instead.

RASPBERRY CHEESECAKE CUPCAKES Chocolate Graham cracker crust mix CHEESECAKE: 24 oz. cream cheese 1 cup of pure cane sugar 1 tbsp of vanilla 5 eggs TOPPING: 1 1/2 cup of sour cream 3/4 cup of pure cane sugar 2 tsp of vanilla 1 cup of red raspberry jam 1 cup of black raspberry jam Make graham cracker crust and pack down in bottom of cupcake liners. Cream together the cream cheese, sugar and vanilla. Combine in eggs one at a time. Spoon the cream cheese mixture into; cupcake liners until almost full. Bake 30 minutes at 300 degrees. Remove from oven, cool 5 minutes. Mix topping ingredients. Fill indentation in cupcakes and smooth on top. Return to oven for 5 minutes. Remove from oven and cool. Top with the two raspberries jams. Dividing the jams in half on top of the cupcake. Makes 2 dozen regular size cupcakes.
