i went to the store last nite
and i ran across these halibut burgers they sound so good but how do you cook them would you cook them on the stove or the oven and if so how long and what would the oven temp be |

I actually would imagine they have to be pan fried (lots of oil) over medium heat. If you bake them I would recommend 350 degrees and cook them for about 10 minuets and check them every two after that. Fish cooks very fast. I think they should JUST begin to crisp over and they should be ready. Be sure to preheat and grease the bake pan well before putting them in the oven.

Heat oven to 450 degrees. Tear off a few squares of foil. Lightly coat one side of each with vegetable spray or oil. Place a fish on a square. Drizzle with oil, sprinkle with salt and pepper and top with bread crumbs . Fold foil and seal securely. Arrange on ungreased baking sheet. Bake 8 minutes or until done. Remove from foil. Garnish with lemon. ( This is how I do mine, its also great with butter/garlic brushed over them)

Having cooked for a number of restaurants, I would treat them like a crab cake.
So... Preheat frying pan so it is really hot (meaning a couple drops of water will bead and dance across the surface). Preheat oven to 450 degrees. Add a tablespoon of oil to pan(olive oil is usually best, and is often used with rosemary to prepare halibut). Wait until the oil begins to smoke, then turn heat to medium low (it may vary on your stove....on my home stove, number 4 is good). Add halibut burger to pan gently to avoid splatter. Wait until bottom is brown, then flip the burger. Place burger and pan in oven for about 5 - 7 minutes. This will make sure the middle is thoroughly heated. The bottom will brown in oven. All of this assumes that the burger is cold from refrigeration. It also assumes the burger is roughly 3/4 inch thick. If the burger is 1/2 thick, you can reduce oven time to about 4 minutes. |

I totally agree but would like to add that I love to add a little butter to the olive oil .. I prefer the taste. i used reg oil and it turned out awsome!!! i still have more in freezer might buy more later |

In the restaurant, we use drawn butter and olive oil. Butter burns too fast by itself, but butter and oil together can be turned into nice sauce if you want to take the time to do everything on the stove top. In fact, garlic, shallots, white wine (or sherry), lemon juice, and rosemary might make a nice sauce for a halibut burger after tightening it up with a small slurry of cornstarch or flour. I might even throw some halved grape tomatoes in like we used to do in a scampi at one place.
