I've been reading a lot about anti-nutrients lately. It's actually amazing that I'm 38 years old and just now hearing about this. Most foods have chemicals or enzymes that prevent the absorption of nutrients. From what I've read, cooking eliminates most of the anti-nutrients in vegetables and meat, but processed meats, grains and potatoes remain high in anti-nutrients despite cooking.
Does anyone know more about anti-nutrients or have any suggestions for books or websites where I can learn more? |
