What I like about Texas?
FARMS I just put 8 pints of homemade pickles in the canner to process...cukes from the farm, fresh and crisp. These should be yummy! |

If it's a veggie or fruit and I can jell, jam, or preserve it...I'm there. I love doing that for some reason and I turn out yummy stuff that is beautiful to look at. There is something SO satisfying about a pantry full of those jars! Cooking BBQ? Not necessarily my forte. Pie? Decent, but not frequent enough to judge. Keeping my knives sharp? Well...I swear I'm learning... |

I put up over 2500 jars of food...No that is not a typo...I bought begged and stole jars from everyone. I put up everything from veggies to cabbage rolls to Swiss Steak.and everything in between...I on'y went to the store for paper products the next year and staples you had to have..I lost 15 jars of squash. Not bad huh? I never did it again to that extent...but dang it was nice to just open a jar and heat it up. |

I used to can all the time...it was a way of life..when my kids were little..I canned all one summer..every day. I put up over 2500 jars of food...No that is not a typo...I bought begged and stole jars from everyone. I put up everything from veggies to cabbage rolls to Swiss Steak.and everything in between...I on'y went to the store for paper products the next year and staples you had to have..I lost 15 jars of squash. Not bad huh? I never did it again to that extent...but dang it was nice to just open a jar and heat it up. Wow! That was a bunch! I think my top season was around 600 jars. Those are the times you laugh hysterically when you see a box of Ball jars that says "home canning is fun!" It's WORK! But so rewarding. When I was a young single mom running a home daycare, I would get cases of beans, take all the little tykes outside to a big picnic table, snap the ends myself (so there wouldn't be so much waste) and let them all snap and pack their own jars. They ate beans proudly all winter, even if they wouldn't touch them otherwise. The parents laughed at my little sweatshop labor arrangement but couldn't find fault if the kids were eating veggies! Plus, I ended up teaching 3 moms to can and preserve! Pretty cool, huh? |
