I searched and there are a lot of recipes for pasta with scrimp and artichokes. Now I'm convinced I have to make it, something like this recipe below but substitute fresh tomatoes with sun-dried in an herbed, olive oil base.


PASTA WITH SHRIMP & ARTICHOKE HEARTS

1 tbsp. olive oil
1 red onion, sliced
1/2 tsp. garlic, chopped
2 tomatoes, chopped
Salt & pepper
1/2 lb. peeled shrimp
1 can artichoke hearts
1/2 lb. pasta, cooked
Fresh parsley, chopped
Grated Parmesan cheese

Saute onions until tender, add garlic and cook 2 more minutes. Add tomatoes, salt and pepper and heat 5 minutes. Reduce heat, add shrimp and simmer until they are pink. Add artichokes and heat through. Toss pasta until the sauce is blended. Garnish and serve with crusty French bread.


Sounds really good. Although I am not an artichoke fan. But You could substitute with something else. Sounds good. Let me know if u try it out.

I'm not sure about the artichokes either but wanted to broaden my horizons and try something new! I'll let u know how it turned out :)
