BAKED CARAMEL BANANAS

6 lg firm bananas
1/2 cup of lemon juice
6 tsp of grated lemon peel
6 tsp of dark brown sugar
1/2 tbsp of un-salted sweet butter, melted
1 1/2 tsp of dark rum or rum flavoring
1/2 pound of caramels melted

Preheat oven to 375 degrees.

Peel bananas; cut lengthwise in half.

Place halves cut side down in greased baking dish.

Brush with lemon juice; sprinkle each half with 1/2 teaspoon grated lemon peel and 1/2 tablespoon brown sugar.

Drizzle with melted butter.

Sprinkle each half with 1/8 teaspoon rum or rum flavoring.

Drizzle with melted caramel.

Bake for 20 minutes. Serve warm, plain or with ice cream.

BREAKFAST CASSEROLE

1 lb. of bulk breakfast sausage
1/2 red pepper diced
1/2 yellow bell pepper diced
1/2 small red onion diced
2 roasted green chilies diced
1 green onion sliced
2 small sticks of celery diced
8 ounces of small mushrooms, chopped
PAM spray
3 cups of warm milk
10 large eggs
1 tsp of stone ground mustard
3 tsp of dill weed
2 tsp of chopped parsley
10-12 slices white bread
2 cups of extra sharp shredded cheddar cheese
12 slices of cooked bacon
8x11 glass pan

Fry sausage in skillet using side of spatula to continually break into smaller chunks. Fry until it is uniformly brown. Drain in colander.

Chop onions, peppers, green chilies, celery and mushrooms and fry in small amount of olive oil. Drain in colander. Mix together with sausage being sure to break into smaller chunks.

Spray 8 x 11 glass pan with PAM. Cut off crusts of sliced bread and discard. Cut bread into chunks and line the pan with the cut up bread.

Next, layer with the sausage and vegetable mixture placing it on top of the cubed bread.

SEPARATELY. . . Pour 3 cups milk into large measuring cup. Break eggs into a separate large bowl and whisk. Then add the above 3 cups milk and whisk together. Combine dill weed, ground mustard and parsley. Whisk together again to mix well.

Pour egg, milk, spices mixture slowly and evenly over the sausage layer. Layer 2 cups shredded cheddar cheese evenly on top.

Sprinkle with chopped parsley. Top with chopped cooked bacon Cover and refrigerate overnight.

In AM, bake uncovered at 325°F for 55 minutes. Prep time 40-45 minutes.

MEXICAN STUFFED CHICKEN BREASTS

4 whole chicken breasts, split and boned
3 tbsp. butter, softened
1/4 cup of grated pepper Jack cheese
1/4 cup of grated sharp cheese
2 tbsp of sliced green onions
4 tbsp of chopped green chilies
1/4 cup of butter, melted
1 cup of Cheddar cheese cracker crumbs
1 1/2 tbsp. taco seasoning mix

Divide chicken breasts in half and pound until flattened. Combine butter with cheeses, chilies and onions.

Place a portion of mixture at the end of each chicken breast and roll up, tucking in ends to completely enclose filling.

Dip each roll in melted butter, then coat with mixture of cracker crumbs and taco seasoning.

Arrange coated rolls in baking dish. Cover with foil.

Place in a preheated oven at 375 degrees, for 35 minutes.
Let stand for 5 minutes before serving.
