This was yummy!
I made it specifically to go with metalwings smothered pork chops (recipe is posted in these threads) and to use up the "oops, I bought broccoli AGAIN because I forgot I already had some" that needed to be cooked. I think you could use this recipe on just about any veggies and have a delicious side dish! Summer squash, eggplant, cauliflower or whatever...

My son loved it (and the pork chops, too!)

Leave out the bacon if you are a lacto/ovo and you've got a delicious vegetarian main course.


Broccoli Cheese Casserole

2# Broccoli cut into florets (about 8 cups prepared)
Salt for blanching water (optional)
2 strips of thick cut bacon, sliced crosswise into 1/4" strips
1/3 C flour
5 eggs
1/2 C cream
1 C whole milk
2-3 tsp (or as much as you like) freshly ground black pepper
1/2 tsp salt (optional)
2 tsp Dijon mustard
8 oz cheddar cheese, grated

Preheat oven to 425.

Bring large pot of water to boil and blanch florets for 3-5 minutes. Strain and rinse with cold water to stop cooking.

Cook bacon pieces until lightly browned or crisp according to your preference.

Whisk together eggs and flour, then whisk in cream and milk. Add black, salt, and mustard plus about 1/3 of the grated cheese.

Place the blanched broccoli in a buttered 2 1/2qt casserole dish, sprinkling cooked bacon pieces into the broccoli. Pour the egg mixture over the broccoli and top with remaining cheese.

Bake 25-40 minutes or until set. Once the top has browned you may wish to tent with aluminum or a casserole cover to keep from burning.

Serves 5 as a main course or 10 as a side dish.
