Tomato Sauce Garlic Onion Chipolte Whatever other seasonings you want - be sure to include high quality red chili powders (a nod to my recent NM heritage) Last but not least, add a secret ingredient... Ask me nicely and I might tell, although I hear that these kind of secrets go to the grave in Texas. I'm pretty darn proud of this pan of yumminess... |

You can give a version of your recipe, or another recipe. But please note, this is the RECIPE/COOKING section. You didn't even describe the flavors/texture/etc.

Is your first try going to be your lifelong secret? For someone who doesn't measure...it's all kinda vague, that math stuff like Cups and Tablespoons. Soup-like stuff is kinda dump and mix until it's right. I used extra onion powder, both dixon medium hot chili powder and some nambe red chili powder, a little Mrs. Dash, some sea salt, black pepper, cumin (a must!) All was "until it looked right" and then gave it a taste. As for the secret - maybe I can be broken. Whaddayagot??? |

All joking aside-this wasn't supposed to be chili made from possum meat, but chili made by "The Possum."
Guess you'd have to have been there... |

My nephew use to tell everyone he wanted to eat possums when he was like 4 or so & then a friend told him that possums were greasy-LOL! He cried and said "tony told me I can't eat possums cuz possums are greasy"! it broke his heart |
