Since linux is just the kernel - and not a complete operating system - it is used as the basis for a wide variety of operating systems - include many that are custom built for some very specific purpose or device.

Most of the ebook readers that use the eink display use custom OSes based on linux.

xbox, pda, ps2, handphone ... i think

well, cause it's an open source kernel, so people can modified to adapted the kernel to the hardware.
