People put lots of things in omelets and most things work fine. I had some BBQ ribs left over with "fall off the bone lean meat". Some meat from a rib and some pepper jack cheese ended up being a smokey, spicy, cheesy, yummy omelet with some nice picante sauce on top. Some picante in the eggs adds fluff and flavor.

This sounds yummy but frankly if I had the ribs, cheese and sauce who needs to bother with the eggs??bigsmile I'd have the ribs eaten before the eggs warmed in the pandrool

I did something similar with left over steak and potatoes o'brien (the ones that are diced with onions and green peppers) smoked provolone cheese and A1 sauce, now that was a great omelet!
