I used to avoid catfish (that sort of grey-fleshed stuff) but now that I've experienced good, fresh catfish here in my new home in TEXAS (how lucky am I?) I'm pretty partial to it! I tried this recipe last week and thought it was pretty yummy...easy, too. You might spice up the fish fillets before flouring or add to the flour mixture, as you desire.

If I can make it, ANYBODY can make it!

We have alot of cats around here too. Sounds good. Especially with some cajun seasoning. Thanks for sharing....happy

Catfish is hard to cook right but my personal favorite way to have it is in corn meal with cajun seasoning and it must be deep fried.
