I have recently been blessed with an abundance of centered cut pork chops. I will BBQ some out on the grill. Looking for some ideas????

Original Recipe Yield 8 servings

Ingredients

* 1/3 cup honey
* 3 tablespoons orange juice
* 1 tablespoon apple cider vinegar
* 1 teaspoon white wine
* 1 teaspoon Worcestershire sauce
* 2 teaspoons onion powder, or to taste
* 1/4 teaspoon dried tarragon
* 3 tablespoons Dijon mustard
* 8 thin cut pork chops

Directions

1. Place honey, orange juice, vinegar, wine, Worcestershire sauce, onion powder, tarragon, and mustard in a large resealable plastic bag. Slash fatty edge of each chop in about three places without cutting into the meat; this will prevent the meat from curling during cooking. Place chops in the plastic bag, and marinate in the refrigerator for at least 2 hours.
2. Preheat grill for high heat.
3. Lightly oil grill grate. Place chops on grill, and discard marinade. Cook chops for 6 to 8 minutes, turning once, or to desired doneness.

As you know I don't eat pork, but my boys like this.




Ingredients

* 1 1/2 cups Pepperidge Farm® Cornbread Stuffing or Pepperidge Farm® Herb Seasoned Stuffing
* 1 (10.75 ounce) can Campbell's® Condensed Cream of Celery Soup
* 1/2 cup whole kernel corn
* 1 small onion, finely chopped
* 1/4 cup finely chopped celery
* 4 boneless pork chops
* 1 tablespoon packed brown sugar
* 1 teaspoon spicy brown mustard


Stir the stuffing, soup, corn, onion and celery in a medium bowl. Spoon the stuffing mixture into a greased 9-inch pie plate. Top with the pork.
Stir the brown sugar and mustard in a small bowl until the mixture is smooth. Spread the mixture on the pork.
Bake at 400 degrees F for 30 minutes or until the pork is cooked through.

Stuffed Pork Chops

3-4 boneless thick cut pork chops

Stuffing with seasoning, prepared per instructions

3 tsp olive oil (divided)

1/4 sweet yellow onion, diced

8-10 button mushrooms, sliced

1 clove of garlic, minced

Sea salt and fresh cracked pepper to taste

Preheat the oven to 400 degrees. Prepare the stuffing per instructions. In a large oven safe skillet (I used my Dutch oven) heat 2 teaspoons of olive oil over medium heat. Add the onions and mushrooms and sauté until tender; add the minced garlic and stir constantly for 45 seconds. Add the mushroom mixture to the stuffing and mix gently then set aside.

Slice pockets into the pork chops by slicing horizontally in the side, and almost through to the other side. Season the pork with sea salt and fresh cracked pepper, then stuff with stuffing.

In the same skillet or Dutch oven, heat the olive oil over medium high heat. Sear the pork chop on one side for 3-4 minutes until golden brown. Flip the chop and place the skillet in the oven for 9 minutes or until cooked through. Remove from the oven and let the meat rest for 3-5 minutes before serving.

Some of my favorites that are easy.

1. Get some Walker's Wood Jerk Seasoning. This is the real stuff from Jamaica. You can find it at good grocery stores. Marinate the chops in the WW paste then grill. They will taste like Jamaica.

2. Fry a sliced apple and the chops in butter for four or five minutes til the chops are brown. Turn the heat down and add sauerkraut to cover the chops. Add a heavy grind of black pepper. Cover and simmer til the chops are very tender.

3. Season the chops with black pepper and cajun seasoning. Fry in a little oil till brown. Slice one whole sweet onion thin and place in bottom of pan on medium low then add chops on top. Cook covered til onions are caramelized and chops are tender. You may need to turn the onions to get them to caramelize evenly.

#1 sounds good but don't have a good grocery store

#2 Can't stand cooked fruit
