I made potato soup tonight, and it turned out amazing I didn't think it would considering what I put in it but it was REALLY good.
So for those of you that like potato soup.... give it a shot. 6-8 cups of chicken broth ( depending on how thick or thin you want it) approx 6 potatos cut up Chopped onion, celery, carrots. approx 1/4 tsp of each Cayenne Pepper White pepper Nutmeg 4- 5 pieces of bacon 1 - 8 oz package of cream cheese ( I used reduced fat but it's up to you) Mix seasonings in chicken broth, add celery and onions, cook 10 -15 minutes. Then add carrots, cook another 5-10 minutes. Add cut up potatos, and 1 - 2 tbs of bacon drippings. Add half of bacon, crumbled. Cook until everything is soft. Mash some of the potato pieces with your fork ( this will help thicken it ) Add cream cheese, still well. Cook 5-10 more minutes, stirring frequently. Use other half of bacon crumbles to put on top after you serve it. Enjoy |
