Topic: Cranberry Pineapple Walnut Salad

Some recipes are very simple but taste very good. I stumbled upon this last week and now I am addicted. At first I though it might be a nice relish to go with holiday turkey and the like, but I am now eating it as a fruit side with almost anything.



One part by volume or one can jellied whole cranberries (or you can cook some fresh ones with whatever about of sugar you like)

One part by volume (Equal to amount of cranberries) crushed pineapple or adjust to taste.

One half part by volume coarsely chopped walnuts. (I think I'll make the next batch with toasted pecans)

Adjust the moisture (runnyness) of the salad by adding more or less pineapple juice.

Mix and serve chilled.

Side note: Other than the sugar, cranberries are an extremely healthy food that is good for your system. Pineapple is one of the few fruits that helps you to lose weight according to some low carb diet gurus. Walnuts are are extremely healthy also. This dish tastes like it is really bad for you and the exact reverse is true.

I made this today and served with Roast Chicken. It was awesome. In fact I didn't wait for dinner to be ready and kept going back for a spoonful several times before the Chicken was done.

I'm thinking about heating it up and adding a little sugar and making a glaze for Chicken or Ham with it.

It went over great!!! I made about 3 lbs and there is maybe 1 lb left after the 3 of us had dinner. I am going to make it to go with Christmas dinner, Easy, good and no peppers:wink:
