I always make this and take it to potlucks at the office, cuz I don't want to be the dude that shows up with a 2liter of pop, or a bag of chips

It is SO easy, and chicks dig a guy that can cook. Women have offered to sleep with me for this recipe.

1. 2lb bag of frozen shredded potatoes
2. 16oz tub of sour cream (can be fat free or lo fat, if you're into that kind of thing)
3. 8oz package of shredded cheese
4. 1/3 stick of butter, melted
5. 10oz can cream of chicken soup
6. one large onion, diced (optional)
7. 8oz pckg diced ham (optional)
8. salt and pepper (use your best judgement)

Mix it together into a large bowl. Place in 9x13 greased pan. Bake at 375 for 1 hour.

Yes, it can be served as a casserole/main meal, especially with the ham. Without it, there really isn't much protein.

drool Yummy,
Now i'm hungry for some Baked Potato Soup...

BAKED POTATO SOUP

6 baked potatoes
1/2 lb. creamy butter
1 c. instant mashed potatoes
1 qt. half and half
salt and pepper to taste
3 stalks chopped celery
garlic powder to taste
milk (to thin with)
1/4 lb. crisp fried bacon
2 chopped green onions
dash of Worcestershire sauce
shredded Cheddar cheese
1 large white onion, chopped

In large pot, melt butter; add celery, onions and 6
baked potatoes (peeled and chopped). Add garlic powder, salt,
pepper and Worcestershire sauce. Cook until all vegetables are
tender. Add half and half and milk (reduce heat). Slowly stir
in instant mashed potatoes. If soup is too thick, add more
milk. Add crumbled crisp bacon. Sprinkle cheese and green
onions on top of soup. Place bowl under broiler until the
cheese melts.
