I used to have Menudo once a week but the little restaurant closed where I got it. I made it once but mine wasn't all that great. I over cooked the tripe and it was mushy.
When I was young my mom would made chiterlings sometimes. |

Nothings wrong with eating the guts, lol. Do you eat organs? I.E. liver, heart, kidney? I eat just about anything. I have tried just about everything it seems lol. I can not eat organ meat due to how strong it is; it kicks my gag reflex every time I try, though I can and do cook with chopped up liver, heart and gizzards. I also eat ssquid, escargote (sp?), and hope to someday try frozen monkey brain (sorry Earthy). As long as you can get past the fact of what the organs do and still eat them, then there is no reason for you to be squeemish over intestines ;-) Good luck, and bon appetite!! |

yeah not squeamish about the organs. the best part of the deer hunt for me is eating the heart and liver for breakfast the next morning, soak over night in saltwater and lightly breaded fried. got a few pounds of gizzards in the freezer "anyone else remember when you could get an order of liver and gizzards at KFC?". and our family raised beef always kept the heart n liver, took an old boy i worked wtth to tell me to quit tossing the tongue away and told me how to boil it and skin it. "talk about some excelent soup stock" so i guess its just getting over the the taboo thing. kinda like when i lived in portland, or. and seen the chicken feet in the meat department. but that a whole nother story.... thanks everyone for the imput
