Carne Seca and Eggs
Here is a little more unusual dish that you will probably like. 4 ounces cream cheese 2 ounces dried beef (you can substitute other meat if you like) 2 teaspoons butter 1/2 cup Hatch Enchilada Sauce 1 cup chopped tomatoes 4 whole eggs, lightly beaten with 2 tbs water Put beef in skillet on low and warm both sides then shread with two forks. Add butter to skillet and heat. Add beef for thirty seconds. Add cheese, tomatoes, and sauce and simmer on medium low. Stir in eggs until set. A variation is two fry the eggs and pour the sauce on top. Another variation is to use hot picante sauce instead of enchilada sauce or to add green chiles to the the sauce.
