I was introduced to grits in Brownsville Texas !!

Finally found Quaker grits up north here

But they don't taste the same!

"Real" grits have to be soaked and the "hulls" floated and skimmed.
It's a lot of work but the taste and texture is very different than "instant grits".

I wondered that too. But I think the processors dry them in order to grind and package them.

I make a mean posole with the hominy. :smile:
