Topic: Potato-Goat Cheese Casserole

I don't make this often because it is so rich, but everyone loves it. I have made versions with different kinds of cheese which were all good (Cheddar, swiss, pepper jack, mexican cheese blend, feta, etc.) but the goat cheese has the most flavor and sharpness.

2 baking potatoes, peeled and sliced 1/4 inch thick
2 (or more) slices bacon
1/4 cup Routh Street Vinaigrette (This is what is used at Star Canyon)
3 Tablespoons chopped chives
1-1/4 pounds fresh goat cheese
2 Tablespoons heavy cream
4 eggs

Preheat oven to 400F. In saucepan, boil potatoes 3 to 5 minutes until just tender when pierced with a knife. In skillet, saute bacon until crisp, drain, and discard fat. Chop bacon.

Lightly oil a 9 x 9 ovenproof casserole. Layer the botton of the casserole with the potatoes, arranging them so they slightly overlap, and sprinkle with salt (optional - I don't use salt). Drizzle with the vinaigrette and sprinkle with the bacon and one tbs of the chives.

In a food processor, combine the goat cheese, cream, and eggs, turning the machine on and off quickly. Mix until just combined, taking care not to overmix (you want to leave some texture). Spread mixture over potatoes.

Place casserole in oven and bake for 15 minutes or until light brown and firm in the center. Sprinkle the remaining chives over the top.

Oh Yeah. Whatever Vinaigrette you have will work. The cheese is the predominate flavor. A variation that I forgot to mention is to caramelize some sweet onions in the bacon fat and add them with the bacon.

I think it is good enough to make you forget the main course!

OH, and I forgot. Make sure the goat cheese is at room temp so the eggs cook and the browning takes place at the right time!
