In my quest to eat better I have been buying more acorn and butternut squash. Most people load it up with butter but that kind of defeats the purpose of eating healthier. I usually add a heavy sprinkle of cinnamon.
Tonight, I nuked one half of a squash in a little water until it was soft (about eight minutes on high) then scratched my head a bit. I dug around the spice rack and found some granulated lime and ground cloves. I added a light sprinkle of the lime, a medium sprinkle of the cloves, then a heavier sprinkle of cinnamon. Wow. It was really good. The lime woke up everything and made the flavor "bright". The cloves were similar to "apple pie" in flavor and aroma and cinnamon rounded everything out with more flavor and sweetness. Didn't add any calories and put a smile on my face. |
