Topic: What to do with crawfish?

I still had some spicy crawfish tails left over and yesterdays omelet was so good I tried something tonight in a similar vein.

I took a cod fillet (about 8 ounces) and thawed it completely.

I took three of the chilpolte peppers in adobo sauce and processed them with about 1/4 cup of mango habenaro chutney. I poured it over the fish.

I added about 1/2 cup of spicy crawfish tails.

I added one fist full of shredded four cheese Mexican blend.

I then microwaved the mix in a covered dish for four minutes on high.

Lacking the pesto and eggs of the omelet, this dish wasn't as complex or full of calories but it was quite delicious.

I served it (to myself) with fresh cantaloupe and asparagus.

We did that to 87 pounds of them two nights ago. We shucked the leftovers so I could experiment.

better yet i add bass to my macoroni such as rotini or ziti. I just make sure I use a lot of butter and parsley. I bake the fish and chop it and sometimes I substitute bass for catfish fillets. I love garlic and throw a lot of it in!

That sounds good. I like garlic and fish. You can never use too much garlic!
