Topic: Mary's Mother's Day Omelet

My mother Mary, who passed in 1987, was a superb cook in all respects and made fans of everyone who had her cooking. She could both remember recipes and create her own from whatever was available. She was truly loved by everyone as a person, not just for her cooking.

As I thought of her today I had the idea of creating something unique in her honor. She taught me to love spicy food so I dug around to see what I had.

I thought I would make an omelet and I usually mix some picante sauce in the eggs to add lift and flavor instead of milk or water. I found some Habanero Mango Chutney so I added a couple of tablespoons of that with a healthy grind of black pepper to the eggs and whipped them up.

I pulled out a small can of Chilpolte Peppers in Adobo Sauce and put three peppers and some sauce in the food processor. I added about half a cup of good American cheese and a dollup of fresh pesto. I chopped it all up finely.

I poured the eggs into the omelet pan and let it set a bit. I added the pepper/cheese/pesto mix to the top of the eggs, spread evenly, and added about 1/4 cup of spicy crawfish tails left over from last nights party.

I covered the pan and lowered the heat till the eggs set.

This was the best omelet I have ever had in my life. I wish I could have made one for mom.
