Topic: What is BBQ to you?

BBQ means something different to every area of the world and region of the US. It is even different from one part of Texas to another. To me, BBQ is slow smoked large pieces of meat on a smoker pit at very low temperature for very long periods of time until melt in the mouth tenderness is achieved. Sauce is optional. What is BBQ to you and your area?

to myself much as yourself...however bbq sauce is required
We have a lot of people who just bbq hot dogs and burgers or brats that isn't bbq to me though. I want the meat to fall apart and be GREAT

Depends, lol. I use BBQ and grill to describe two different things. Where I come from, BBQ implies sauce of some kind, whereas grill just indicates where I'm cooking it.

I'm from da nort', though, and we're a little weird ;)

BBQ may have alot of meanings. I'm hispanic and some of us (dont speak for Hispanics in general) consider BBQ a get together were we grill anything from Burgers, Chicken to Hotdogs. I read above about sauces, well thats usually left to the eaters discretion if you want sauce your meal put some, if you dont then you are ready to start a'munchin.

LOL I was just thinking that, rather than cooking tonight, I may have to hit my fav BBQ place and grab some ribs and slaw for dinner :) This thread fired up the taste buds!

That right! The best time for BBQ is anytime! Please note that BBQ is a noun meaning the food. It is also a method of cooking which varies from place to place. It is also an event; a gathering of happy eaters. It is also a recipe which do not hesitate to share. It is also a flavor, which varies a lot but usually includes smoke. It is also a philosophy. Here, it is a culture. Sometimes it can be a war (I am on a cookoff team). It is always a form of happiness if done properly.

Please respond to any of the above.

I come from Virginia (famous for Smithfield Ham and Pork products). There, if you say you are going to have barbeque (BBQ), it means barbequed pork which is slow cooked over a pit. Then it is pulled, minced or sliced. We have some restaurants that offer bbq pork or beef.

I've lived in other states, where they refer to BBQ as chicken.

It doesn't really matter to me, one way or the other, beef, pork or chicken, as long as it is lip smacking and finger licken good.

I think ANYTHING BBQed is cooked over fire. The BESTIST BEST BEST is campfire BBQ! A huge wagon wheel sized slab of moo that sat in a marinade bag the whole trip! A couple of plucked cluckers! Add some ice cold BrewHAHA (Preferably Grolsch!)...

Barbecued Bananas

Peel and slice lengthwise medium ripe bananas

Paint with Rum and sprinkle with coconut while placing on twelve inch square of aluminum foil.

Optional: Add chunks of pineapple.

Wrap tightly and place on upper rack of gas grill.

Cook steaks or whatever as usual but lid must be closed.

Bananas are done when soft but they pretty much always seem to be done after cooking most anything.

Highly addictive.

BBQ is life to me, if I ever moved out of Texas I'd be so screwed, so many places around here that have awesome brisket, there's Elgin sausage, not to mention all the places with amazing sauce...dang it, now this thread has me jonesing for some Rudy's! laugh

BBQ to me is a really good classic chicken breast which incorporates open pit bbq sauce. Open pit is my choice. I like bbq chips too. That is what i think of when i think of BBQ. Although once I saw a restaurant serve instead of tomato sauce for the macoroni they used BBQ

Here is a trick I learned from someone who left Texas for awhile and was desperate for smoked BBQ. He had a three burner gas grill and put an old baking pan on the far right. In the pan he put a couple of handfuls of oak wood chips from a limb from a tree next to the grill. He wrapped the wood chips in foil and poked a few holes in it to let the smoke out. He then adjusted the right burner to just hot enough to make the wood smoke with the lid closed and being left alone for awhile.

He then put a whole chicken, or ribs, or roast, or pork butt, or whatever as far to the left side as possible, away from the heat. I tried this on my gas grill (I have a smoker pit too) and it works pretty well and is way less trouble than the smoker pit. You don't obviously get the depth of smoke flavor that the real deal produces but it is easy and produces a very nice flavor with almost no effort. It cooks much faster than a pit but slower than grilling. If you do a thick steak this way you can turn the left burner on high with the lid open at the end to add some char. Although I learned this many years ago I noticed there are actually cookbooks now about "Indirect grilling".

Just for the record, I have traveled a lot and love KC BBQ, Memphis Ribs, Carolina pulled pork, etc. The best BBQ is the piece in my hand approaching my mouth.

carolina has 3 styles of bbq,, pulled chicken with red sauce, pulled pork with red sauce,, and eastern,, where i come from with a vinegar sauce. thats what i was raised on,, fresh bbq once a month completely homemade. still makes my mouth water every time i smell that sauce.

So what's everyone's grill of choice? I invested in a really nice charcoal grill. I used to have a gas grill, and although it was faster, the taste and quality is just not the same. What's funny is all my neighbors each has a gas grill, but they are always asking to borrow mine because they say it makes the food taste better, lol.
