These are awesome when you want something quick and light, but filling :)

boneless skinless chicken breasts, cut into strips
1 packet of dry ranch dressing for every 2 pieces of chicken
green and red peppers, thinly sliced
tortillas

Brown the chicken strips for 3-5 minutes in a skillet. Add the pepper strips and cook for another minute or two, then stir in the ranch dressing and 2 T of water. Cook for one more minute, and then serve in a warm tortilla. These are also great if you bread the chicken strips and serve with ranch dressing.

That is a winner! However, if you have a little more time cut up some sweet onions in thin strips and saute until caramelized. They make a fine addition to the party. For a little extra yummy, throw the tortillas directly on the stovetop burner for a few seconds to heat and slightly scorch. It will make them warm, soft, and taste like they were fresh cooked outside on the 'Ranch'. Some cannot eat such a thing without adding a little hot sauce.
