Went to a bbq next door and had an authentic Mexican shrimp
taco! OOOHHHH BABY ! Good stuff! His wife won't give me the recipe! Can
anyone help? I really am jonesing! It is not Tex-Mex! Real stuff maybe
from the Yucatan area. HELP!!

Shrimp Tacos

Recipe Ingredients:

12 Flour Tortillas
Oil for frying
3 Garlic Cloves diced
1/2 cup Salsa
1 Tbsp. fresh Cilantro
1/2 lb. Shrimp chopped
Guacamole (optional)
12 Toothpicks
Salt and Pepper to taste

Recipe Instructions:

1. In two tablespoons of oil, fry garlic, salsa, cilantro and shrimp
until moisture is absorbed thoroughly, season with salt and pepper and
allow to cool.
Fill tacos and seal each one closed with a toothpick; fry it in hot oil
until golden and remove excess oil by placing on a paper towel.
Accompany tacos with guacamole if desired.

Shrimp Soft Tacos

Recipe Ingredients:

8 Soft Taco Size Flour Tortillas warmed
3/4 lb. Shrimp peeled and deveined
1 Jalapeño Pepper seeded and diced
2 Garlic Cloves minced
1 large Onion chopped
2 Tomatoes chopped
1/4 cup fresh Cilantro chopped
1/2 tsp. Cumin ground
Lime wedges, Sour Cream, Jack Cheese shredded

Recipe Instructions:

1. Saute garlic in oiled skillet, add shrimp and cumin. Cook 1 minute or
until pink. Remove shrimp. Add onion and saute until tender. Add shrimp,
tomato and pepper. Heat through. Remove from heat, stir in cilantro and
a pinch of salt. Serve in tortillas with garnishes and lime wedges.

Tacos de Camarones al Mojo de Ajo
We highly recommend using fresh 21/25 shrimp per pound. When cut in
half, this size shrimp is ideally dispersed between pieces of sauteed
onion, jalapeno, and garlic.

1/4 cup canola oil
1 white onion, sliced
1-1/2 pounds shrimp, (21/25 count) peeled, deveined, & split lengthwise
Kosher salt
3 tablespoons unsalted butter
1 jalapeno chile,thinly sliced
2 tablespoons chopped garlic
1/2 bunch Italian parsley, stemmed and chopped
16 (50inch) fresh corn tortillas
1 lime, cut into wedges

METHOD

Preheat skillet or griddle over medium heat for tortillas.

Heat a separate large saute pan or skillet over high heat. Add oil and
onion and quickly stir 2 to 3 times. Immediately add shrimp and a few
pinches salt and saute for 1 to 1-/2 minutes, until shrimp begin to turn
red. Add butter, jalapeno, and garlic and saute for 1 minute as butter
begins to melt and garlic releases its aroma. Adjust seasoning with
salt if necessary and continue to stir for about 30 seconds; the whole
cooking process for shrimp should be no longer than 3 minutes. Stir in
parsley and remove pan from heat. Shrimp should be tender, garlic
aromatic, and onions and jalapenos crisp to the bite.

Working in batches as necessary, warm both sides of the tortillas in
preheated skillet. Place them in stack of 2 on individual plates or a
platter, so that each taco ends up with a double layer of tortilla.
Evenly divide the filling among the 8 stacks, and serve immediately with
lime wedges.

Care to try it New Orleans Style

Shrimp Taco Recipe

For the Shrimp:

2 tsps Creole Seasoning, mixed with:
1/4 tsp Chili Powder
1/4 tsp Cumin

1 Tbsp Unsalted Butter
2 Tbsp Garlic
1/2 1b Medium Shrimp
Lime Wedge
1 Tbsp Chopped Cilantro
If you like heat add 1-2 Diced Chipotle Peppers (Canned, Smoked
Jalapenos) Optional

Toss the Shrimp in the seasoning mix. Melt the butter over Medium-High
Heat, add the Garlic and Chipotles (if using), saute for 1 minute. Add
the shrimp, saute until just barely cooked through, spritz with fresh
Lime juice and toss in the Cilantro. Serve immediately.

For the Tacos:

All items on the table for self assembly

4 Taco Shells (I fried my own using a need little gadget made
specifically for this. 3 inches of 360 degree lard or vegetable oil, Fry
until lightly Golden Brown, maybe 2 minutes. Drain.)
or use Warmed Flour Tortillas
1/2 Avocado, sliced or diced just before serving
1 Cup Shredded Monterey Jack Cheese or Queso Blanco
2 Cups Thinly Sliced Leaf Lettuce
Sour Cream
3/4 Cup Diced Tomatoes
Chipotle Hot Sauce
The Shrimp

I assemble mine: Shrimp, Cheese, Lettuce , Tomatoes, Avocados, Sour
Cream, Hot Sauce.
Serve with Refritos and Mexican Style Rice, with a cold Mexican Beer,
such as Dos Equis or Pacifico.

Dang, I hate recipes. Go with what you like, get a spice taste just a tiny finger tip. if ya like it put a bit more than the other... Here ya go TRY cumin, coriander, CHILI POWDER( give it twice as much as the others), pepper, and make salt 5%ish of your food... a big pinch for a pound. toss your seasonings in with some small cut pork or beef(or both my fav) turn it on high with a few tablespoons 4-5 of oil corn/veg/canola and keep it moving every couple mins. put into a tortilla with cilantro, sour cream, cheese, salsa whatever you like DO IT! you may create a phenomenon. OH and if its too confusing hit me up Ill help walk you through everything.
