As a bachelor I have been eating plain rice and maybe some tilapia with a little tony chachere's and sometimes tuna instead of tilapia for months.
However last night I made really spicy red beans with some cut up baked chicken on top of rice and few other seasonings and I have to say that it was the most satisfying meal I have had in a long time. I miss home cooked meals. 
Tonight I'm gonna cook something like gumbo. Mmmm.. |

Baked ham, baked potato, green beans, applesauce, homemade bread and for desert, warmed cherry pie with butter pecan ice cream on it!
But since I hate to dine alone, it will have to be the drive through at Wendy's!

I just ate a breaded fish sandwich. I'm not likely to eat dinner...maybe a bowl of cereal. I miss cooking some chicken pot pies or some enchilada casseroles. Mmmm. Or a nice squash casserole. I'd make that, but I don't have the ingredients to make them.

It's only 1pm here but we have shrimp scampi, garlic bread, and corn on the cob on the menu for tonight, with some Irish coffee and pound cake for dessert.
