Here is a lil dish that my Ex mother-in-law (may she rest in peace)
taught me how to make.. and the kids love it!

She called it

Mexican-off

ingredients:

Pork Loin Cubed like stew meat
Flour
Shortening
Butter/margerine
seasonings (your choice... I use Tony Chacheris Cajun spice, Garlic
Powder, Sea salt, And ground pepper)
2 cans Rotel chilies (you can choose how spicy or mild you want)
1 can Cream Mushroom Soup

oops i hit wrong thing

you add seasonings to flour and measure out enough flour to coat the
pork.

in the meantime you use a large frying pan and place a scoop of
shortening and a scoop of butter/margerine and melt medium heat

add floured pork and brown.. Add shortening and butter/margerine

when the pork is browned you add the two cans of Rotel and stir

add the can of cream of mushroom soup and one can of water. Mix well
and let simmer for about 20 minutes on med heat.
Will be done when makes a thick gravy.

Best served over White rice

Depends on how hungry everyone is as to how much it really serves.... I
make enough for a family of 5... and there are hardly ever any
leftovers.

Tater Tot Casserole


1 can cream of mushroom soup
1 bag tater tots
shredded cheese
1 lb of ground hamburger meat
serves: 6 or 7

Brown hamburger meat. Add cream of mushroom soup and stir together
continuously.
Let simmer on low heat for 15 minutes.

Place mixture in the bottom of a casserole dish. Lay tater tots neatly
on top of the mixture.

Place in oven on 350' and let the tater tots brown.

Sprinkle with cheese; melt it in the oven and ENJOY

This is an awesome shrimp salad
1 bag of coleslaw
celantro
2 green onions
celery - 2 stalks
1 bag of cooked shrimp small or medium unthawed, take off excess water w/paper towel
juice of one fresh lemon
1 can of black olives
Now - cut up all ingredients except for shrimp add 2 tablespoons of mayo, salt and peper to taste. Set in refregerator for about 2 hours.Serve w/ triscuit crackers. This one is a real hit...
