Well, my mom and I just make the filling as if we were going to make the pie, then dump it in freezer bags (uncooked) and freeze it. Always worked for us. Just don't cook it before you freeze, otherwise you'll end up with applesauce pie noway noway laugh

I find freezing works well too.

Make the filling up like you would before you bake and toss it in the freezer. That was when apples are cheap and plentiful you can make it ahead.

Oh, best pie apple ever? Northern Spy...they are tart and maintain their shape well in pies and don't get mushy.

I generally use a mix of apples, sweet, tart, ones that get softer and ones that stay firmer. Makes for great pie! And while I don't use a recipe, most I've seen call for way too much sugar, that's one of the things that help the apples get too mushy and you totally lose the apple flavor.

Also, my son and I discovered one day that a mix of apples and blueberries is a great combo
