Topic: Easy Foods for Vacations

Hey all, I'm taking the kids to the beach next week and want to spend more time on the beach than in the kitchen this year. They are accustomed to daily prepared meals so I'm trying to think of quick & easy things that they'll enjoy. I'm doing Spaghetti in a crock pot one night. I'm doing hamburgers & hotdogs one night.
Any suggestions??? Thanks in advance.

Spaghetti Pie - a huge hit you can pre-make. It actually tastes better after a day or so before consumption. The process is simple but I have no energy to type the recipe now. Email me and I'll give it to you later if you want.

I love to cook and I'm lazier than a cougar on lithium. Consider me your Zen master for vacation culinary fare. :tongue:

egg, chicken or tuna salad can be made up pretty quick and put away for a later time.

maybe go to a surplus/camping store & geat a few packages of freeze dried meals. some of them actually aren't that bad & your kids will think it's fun...tell em it's what the astronauts eat!

tater tot casserole is pretty simple to make and you just have to pop it in the oven.

pizza! you can either pre buy it and it's good hot OR cold for days...or...call in for delivery and they'll bring it right down to the beach where you lay! bigsmile

My rendition of taco casserole (my daughter's favorite meal)

I always by the soft taco kit cause almost everything I need is included.

Make up the meat mixture according to the package. Add a can of refried beans. Place on layer of tortillas to fit the pan (you'll have to tear some of them to cover it evenly). Add a layer of meat mixture. Repeat this 2 more times, cover the top with shredded cheese (I use chedder) and bake in the oven at 400 degrees for about 15 minutes. Then just serve it up and let everyone add their toppings to it. I like serving this better then regular tacos because you don't have to worry about any fillings falling out and making a mess. BTW, you can freeze this and just heat it up when you need it. It usually takes about 15 minutes longer being that it's frozen.
