How would you be able to go back and change a person you already rated on mutual matches to something else. Like is there a way to redo the matches from scratch or change your rating of a person?

Who cares, just e-mail them and say you are interested. If they respond then they are too. If you rated them as a mutual match and now you dont want them to be a mutual match just goe into your mutual matches and delete them.

This is possible on Mingle2 only, yes. Scroll down to the bottom of the user's profile and click the + Match with Her button.
