I used to train in handcuffing techniques...I've been in them and placed people in them...never heard of the nose itch thing while in restraints.
Although, I was also trained in Wicklander which is interrogation techniques...the sign of a nose itching or any other part of the face is a sign to the interrogator that the person is guilty and lying.

For me there is pretty much an instant attraction and I know immediately...there are, however, have been guys that I wasn't sure about that took me by surprise later on with a kiss. I think sometimes you need to just test the waters and see.
